Honey is a liquid processed by bees. It is blend of sugars with hints of wax and functional biocomponents.  I did not dwell on aromatic complexity and dominant source of nectar, but on how crystal types play a role on the perception of sweetness as well as on aroma perception. I also documented the artisan context in which nearly 13 tons were produced in 2022 compared to 18 tons 10 years ago. The sector faces many challenges because of the dominant way of producing and supplying food in general.
